How to make authentic homestyle halwa puri!

Instructions

  1. Start by combining flour and salt in a large bowl. Add ghee or oil and gently mix with your hands. Slowly add water to form a medium-soft dough.
  2. Cover it with a damp towel and let it rest in an airtight container for about an hour. In humid climates, you can skip the damp towel.
  3. Heat a pot of vegetable oil. Make small dough balls, roll them into 4-inch diameter circles, and deep-fry each one, pressing lightly with a slotted spoon for even cooking. They should puff up and turn golden brown within 20 seconds.

Preparing semolina/suji halwa

Instructions

  1. Dissolve sugar in water with a hint of food color and cook until the sugar dissolves. Do not overcook, take your time.
  2. Heat oil or clarified butter, add semolina and a few cardamoms, and roast until fragrant. Keep stirring to prevent burning.
  3. Add the sugar mixture to the semolina carefully. Cook for 3 minutes while stirring. Add kewra essence, cover, and let it sit for 30 minutes.
  4. Serve the Halwa warm, garnished with nuts for an extra layer of flavor.

Making the authentic chole (chickpea curry)

Instructions

  1. Blend boiled potato and chickpeas to form a thick paste, adding water as needed.
  2. Sauté ginger garlic paste and tomato with a mix of spices – red chili powder, black pepper, coriander powder, mango powder, fenugreek seeds, fennel seeds, cumin seeds, mustard seeds, turmeric, and salt.
  3. After a few minutes, mix in the potato and chickpea puree. Cook until the oil starts separating, which should take about 10 to 15 minutes.
  4. Add chickpeas and water, cover, and cook until they are tender. Adjust the gravy’s consistency as needed.
  5. Heat oil, add paprika, and pour over the curry for an added flavor punch of tadka.
